Here's a Great Recipe for Spaghetti with Pistachio Pesto, Basil, and Spicy Tomato Sauce

Ingredients:

  • 1 pound of spaghetti
  • 2 cups fresh basil leaves
  • 1/2 cup shelled pistachios
  • 3 cloves of garlic
  • 1/2 cup extra-virgin olive oil, plus more for drizzling
  • Salt and black pepper to taste
  • 1 can anchovies, drained
  • 2 teaspoons tomato paste
  • 1/2 teaspoon red pepper flakes (adjust to your heat preference)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chicken stock
  • 1 teaspoon dried oregano

Instructions:

  • Prepare the Pistachio Pesto: In a food processor, combine the fresh basil, pistachios, and 2 cloves of garlic. Pulse until coarsely chopped. With the machine running, slowly add 1/2 cup of olive oil until the pesto is smooth. Season with salt and pepper to taste. Set aside.
  • Prepare the Tomato Sauce: Heat a drizzle of olive oil in a large pan over medium heat. Add the remaining garlic and sauté until fragrant. Add anchovies and cook until they start to melt into the oil. Stir in the tomato paste and red pepper flakes and cook for another minute.
  • Add the cherry tomatoes, chicken stock, and oregano to the pan. Stir everything together, reduce heat to low, and let it simmer for 15-20 minutes until the sauce thickens. Season with salt and pepper.
  • Cook the Spaghetti: While your sauce is simmering, bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Reserve about a cup of pasta water and then drain the spaghetti.
  • Combine: Toss the spaghetti with the pistachio pesto, ensuring all the pasta is coated. Add some pasta water if needed to loosen up the sauce. Then serve the spaghetti on plates, topping each with a generous amount of the spicy tomato sauce.
  • Serve: Garnish with some more fresh basil leaves, a sprinkle of crushed pistachios, and a drizzle of olive oil if desired.

And voila! You have a restaurant-quality meal right in your kitchen. Enjoy this delicious fusion of flavors in this unique spaghetti dish! 🍝

The Super Greens: Spotlight on Watercress and its Health Benefits + A Dinner Recipe to Make it Shine

In the realm of superfoods, the humble watercress often gets overshadowed by its more popular cousins, kale and spinach. But this verdant green powerhouse, with its crisp, peppery bite and versatility in dishes, deserves its rightful place on the superfood stage.  It also was declared like the best food ever recently!

Watercress: A Nutritional Powerhouse

Watercress, a leafy green belonging to the cruciferous vegetable family, is packed to the brim with nutritional goodness. One serving delivers more than a day's worth of Vitamin K, significant amounts of Vitamin A, Vitamin C, calcium, manganese, and potassium, and it's a surprisingly good source of protein too!

Beyond these essential nutrients, watercress is also rich in antioxidants, compounds that help protect your cells against damage from harmful free radicals. In fact, watercress contains more than fifteen essential vitamins and minerals, more so than the likes of apples, broccoli, and tomatoes.

Health Benefits of Watercress

Boosts Immune System: Watercress, rich in Vitamin C, aids in boosting the immune system, making you more resistant to common illnesses.

Bone Health: The high Vitamin K content in watercress contributes to bone health, aiding in calcium absorption and reducing the risk of osteoporosis.

Cancer Prevention: Watercress contains glucosinolates which may help to reduce the risk of developing certain types of cancer.

Eye Health: Being high in lutein and zeaxanthin, two antioxidants linked to eye health, watercress can help prevent age-related macular degeneration and cataracts.

Heart Health: The potassium in watercress helps maintain healthy blood pressure levels, and the dietary nitrates it contains have been shown to reduce blood pressure, decrease arterial stiffness, and improve the function of cells lining the blood vessels.

A Starlit Dinner Recipe: Watercress Salad with Grilled Chicken and Orange Vinaigrette

Now that we've touted its health benefits, let's make watercress the star of a delicious, nutritious dinner dish!

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 bunches of fresh watercress, washed and dried
  • 2 oranges
  • 1/2 cup extra virgin olive oil, divided
  • Salt and pepper to taste
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup of sliced almonds
  • 1/2 cup of crumbled goat cheese

Instructions:

  • Preheat your grill or grill pan over medium-high heat. Season your chicken breasts on both sides with salt and pepper and lightly brush with 1 tablespoon of olive oil. Once your grill is heated, add the chicken and grill for about 6-7 minutes on each side, until the chicken is cooked through and no longer pink in the middle. Remove from the grill and set aside.

  • While the chicken is grilling, prepare your vinaigrette. Zest and juice one of the oranges into a small bowl. To the bowl, add the honey, Dijon mustard, a pinch of salt and pepper, and slowly whisk in 1/4 cup of olive oil until emulsified.

  • Peel the second orange and slice into thin rounds. Slice the grilled chicken into thin strips.

  • In a large bowl, combine the watercress, sliced oranges, and grilled chicken. Drizzle the vinaigrette over top, tossing to ensure everything is well coated. Top with the sliced almonds and crumbled goat cheese.

  • Serve immediately, and enjoy the peppery bite of the watercress against the sweetness of the orange and the savoriness of the grilled chicken. A perfect combination!

With its peppery flavor and dense nutritional content, watercress truly is a star among superfoods. Incorporate it into your diet, and your body will thank you for it. Bon appétit!

The Dietary Trifecta: Keto, Vegan, Gluten-Free, and How to Choose Your Path

My friends, health is a journey, and every journey begins with a single step—or, in our case, a single bite. Today, we're exploring three popular dietary lifestyles that have taken the culinary world by storm: keto, vegan, and gluten-free. We'll delve into their differences, why people choose each, and, of course, we'll top it all off with a tasty recipe that could potentially fit all three diets (with a few tweaks, of course).

The Keto Diet

First off, let's talk keto. Short for "ketogenic," the keto diet is a high-fat, low-carb eating plan. The goal? Get your body into a state of ketosis, where it burns fat for fuel instead of carbohydrates. This can lead to weight loss and other potential health benefits like improved brain function and increased energy.

People usually choose the keto diet for weight loss, managing type 2 diabetes, or for its potential benefits in preventing neurological diseases.

Keto Recipe: Avocado Egg Boats

Ingredients:

  • 2 ripe avocados,
  • 4 small eggs,
  • salt and pepper to taste.

Directions:

  • Slice the avocados in half, remove the pit.
  • Crack an egg into each avocado half. Season with salt and pepper.
  • Bake at 425 degrees for 15 minutes or until the egg is cooked to your liking.

The Vegan Diet

Next up, we've got the vegan diet. This one's all about cutting out animal products. That means no meat, no dairy, no eggs—nothing that comes from an animal. People choose veganism for a variety of reasons, ranging from animal rights concerns, environmental reasons, or for potential health benefits like weight loss and reduced risk of certain diseases.

Vegan Recipe: Chickpea Salad

Ingredients:

  • 1 can chickpeas, drained and rinsed,
  • 1 cucumber, diced,
  • 1 red bell pepper, diced,
  • juice of 1 lemon,
  • 2 tablespoons olive oil,
  • salt and pepper to taste.

Directions:

  • Combine chickpeas, cucumber, and bell pepper in a bowl.
  • Drizzle with lemon juice and olive oil, season with salt and pepper, and toss to combine.

The Gluten-Free Diet

Last, but not least, is the gluten-free diet. This involves avoiding gluten, a protein found in wheat, barley, and rye. People with celiac disease must avoid gluten because it damages their small intestine. Others may have a gluten intolerance or sensitivity that causes uncomfortable symptoms.

Gluten-Free Recipe: Quinoa Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers, tops cut and seeded,
  • 2 cups cooked quinoa,
  • 1 can black beans, drained and rinsed,
  • 1 cup corn,
  • 1 cup diced tomatoes,
  • 1 teaspoon cumin,
  • salt and pepper to taste.

Directions:

  • In a bowl, mix quinoa, black beans, corn, tomatoes, cumin, salt, and pepper.
  • Stuff each bell pepper with the quinoa mixture.
  • Bake at 375 degrees for 30 minutes or until the peppers are tender.

Wrapping it Up

Whether you're fueling your body with fats on the keto diet, embracing plant power with veganism, or saying no to gluten, remember: it's all about what makes you feel your best. We're all unique, and there's no one-size-fits-all approach to health. Listen to your body, consider your personal goals and beliefs, and don't be afraid to experiment. Happy eating!

5 Overlooked Foods That Should Be a Daily Part of Your Diet

Maintaining a healthy diet is essential for overall well-being, but many people overlook certain nutritious foods that can significantly enhance their health. By incorporating these often-underappreciated ingredients into your daily meals, you can unlock a wealth of health benefits. In this blog post, we will explore five such overlooked foods that deserve a place on your plate.

1. Brussels Sprouts: The Mighty Miniature Green Gems

Brussels sprouts often receive an undeserved bad reputation, but these miniature cabbages are packed with nutritional benefits. Rich in vitamins A, C, and K, as well as folate and fiber, Brussels sprouts provide antioxidant properties and can support a healthy immune system. Roast them with olive oil and seasonings for a delicious side dish or add them to stir-fries and salads for an extra nutritional punch.

2. Sardines: A Nutritional Powerhouse from the Sea

While many people gravitate towards larger fish varieties, sardines, with their small size, often go unnoticed. These oily fish are an incredible source of omega-3 fatty acids, which play a crucial role in heart health, brain function, and reducing inflammation. Sardines are also rich in vitamin D, calcium, and protein. Try incorporating them into salads, pasta dishes, or enjoy them on whole-grain crackers for a nutritious snack.

3. Turmeric: The Golden Spice of Life

Turmeric, the vibrant yellow spice commonly used in curry dishes, has gained attention for its potent health benefits. Curcumin, the active compound in turmeric, possesses powerful antioxidant and anti-inflammatory properties. It may help alleviate symptoms of arthritis, improve brain health, and potentially reduce the risk of chronic diseases. Incorporate turmeric into your diet by adding it to soups, stews, smoothies, or golden milk.

4. Beets: Earthy Root Vegetables with a Nutritional Punch

Beets are often overlooked, but these earthy root vegetables are a nutritional powerhouse. Packed with antioxidants, fiber, and essential nutrients like folate, manganese, and potassium, beets offer a range of health benefits. They may improve athletic performance, support liver function, and promote healthy blood pressure levels. Enjoy beets roasted, steamed, or grated into salads for a burst of flavor and nutritional goodness.

5. Lentils: Tiny Legumes with Big Health Benefits

Lentils are versatile legumes that provide an impressive nutritional profile. They are an excellent source of plant-based protein, fiber, iron, and folate. Incorporating lentils into your diet can aid in digestion, promote heart health, and help manage blood sugar levels. Add lentils to soups, stews, salads, or use them as a meat substitute in recipes like lentil burgers or tacos.

While it's important to focus on a balanced and varied diet, it's equally important not to overlook certain foods that can greatly enhance your health. Brussels sprouts, sardines, turmeric, beets, and lentils are just a few examples of often-underappreciated foods that offer a plethora of nutrients and health benefits. By incorporating these ingredients into your daily meals, you can take significant steps towards a healthier and more vibrant life. So, explore new recipes, experiment with flavors, and savor the benefits of these overlooked foods. Your body will thank you.

Roasting Brussels sprouts is a popular and delicious way to enhance their flavor and achieve a crispy texture. Here's a simple recipe for roasting Brussels sprouts:

Ingredients:

  • 1 pound Brussels sprouts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

2. Rinse the Brussels sprouts under cold water and pat them dry with a clean kitchen towel.

3. Trim the stem end of each Brussels sprout and remove any yellow or damaged outer leaves.

4. Cut the Brussels sprouts in half lengthwise. For larger Brussels sprouts, you can quarter them for more even cooking.

5. Place the halved Brussels sprouts in a large mixing bowl.

6. Drizzle olive oil over the Brussels sprouts, ensuring they are coated evenly. You can adjust the amount of olive oil based on your preference.

7. Season with salt and pepper to taste, and toss the Brussels sprouts to ensure they are well coated with the oil and seasoning.

8. Transfer the Brussels sprouts to the prepared baking sheet, arranging them in a single layer.

9. Roast the Brussels sprouts in the preheated oven for about 20-25 minutes, or until they are tender and golden brown. You can flip them halfway through the cooking time to ensure even browning.

10. Remove the roasted Brussels sprouts from the oven and let them cool for a few minutes before serving.

Roasted Brussels sprouts make a delicious side dish or can be added to salads, grain bowls, or pasta dishes. The caramelization that occurs during roasting brings out their natural sweetness, while the outer leaves become crispy. Enjoy these flavorful and nutritious roasted Brussels sprouts as part of a well-rounded meal.

5 Basic Foods to Incorporate into Your Diet and Why!

Let's say you just want to eat better.  Where do you start?  What do you do?  The reality is most people have terrible diets.  I can drive down the main street next to my house and there is no shortage or fast food, donuts, ribs, or fried chicken.  So what general rules should you try to follow if you are trying to eat a little better?

There are several healthy foods that people often overlook or don't eat enough of in their diet. Here are five quick examples of things you should pick up at the grocery store the next time you are there:

  1. Leafy Greens: Vegetables like kale, spinach, Swiss chard, and collard greens are packed with essential vitamins, minerals, and fiber. They are low in calories and high in nutrients, including iron, calcium, and vitamins A and K.
  2. Berries: Berries such as blueberries, strawberries, raspberries, and blackberries are rich in antioxidants, fiber, and vitamins. They provide a range of health benefits, including reducing inflammation and promoting heart health.
  3. Legumes: Legumes include foods like lentils, chickpeas, black beans, and kidney beans. They are excellent sources of plant-based protein, fiber, vitamins, and minerals. Incorporating legumes into your diet can improve digestion, lower cholesterol levels, and support weight management.
  4. Nuts and Seeds: Almonds, walnuts, chia seeds, flaxseeds, and hemp seeds are all nutritious additions to your diet. They are high in healthy fats, protein, fiber, vitamins, and minerals. Nuts and seeds have been associated with a reduced risk of heart disease and can help satisfy hunger between meals.
  5. Whole Grains: Whole grains like quinoa, brown rice, oats, and whole wheat bread are more nutritious than refined grains. They contain fiber, B vitamins, antioxidants, and minerals. Consuming whole grains is linked to a lower risk of chronic diseases such as heart disease, type 2 diabetes, and certain cancers.

Incorporating these nutrient-rich foods into your diet can contribute to a balanced and healthy eating pattern. Remember to consult with a healthcare professional or registered dietitian for personalized dietary advice based on your specific needs.

  2. In a mixing bowl, combine the mixed nuts, pumpkin seeds, and sunflower seeds.
  3. In a separate small bowl, whisk together the honey, melted coconut oil, cinnamon (if using), and sea salt until well combined.
  4. Pour the honey mixture over the nuts and seeds, and toss to coat them evenly.
  5. Spread the coated nuts and seeds in a single layer on the prepared baking sheet.
  6. Bake in the preheated oven for about 15-20 minutes, or until the nuts are golden brown, stirring once or twice during baking to ensure even toasting.
  7. Remove from the oven and let the mixture cool completely on the baking sheet.
  8. Once cooled, transfer the honey roasted nut and seed mix to an airtight container or enjoy immediately as a snack.
  9. Feel free to customize this recipe by adding other favorite nuts, seeds, or spices like cayenne pepper or nutmeg to suit your taste preferences. This nut and seed mix is not only delicious but also provides a healthy dose of protein, healthy fats, fiber, and various vitamins and minerals.

Remember to consider any allergies or dietary restrictions you or others may have when selecting the nuts and seeds for this recipe.

Chickpeas are a type of legume that are packed with nutrients and have been consumed for thousands of years in various cuisines around the world. They are also known as garbanzo beans, and are a staple in Middle Eastern, Mediterranean, and Indian cuisine. Chickpeas are incredibly versatile and can be used in a variety of dishes such as salads, soups, stews, and even baked goods. In this blog post, we will explore the health benefits of chickpeas and what makes them so nutritious.

High in Protein and Fiber

Chickpeas are an excellent source of plant-based protein, making them a great option for vegetarians and vegans. One cup of cooked chickpeas contains around 15 grams of protein, which is comparable to the amount found in a chicken breast. Fiber also helps to regulate blood sugar levels and can lower cholesterol levels.

Chickpeas are a great source of several important vitamins and minerals, including folate, iron, phosphorus, and manganese. Folate is essential for healthy fetal development in pregnant women and can help prevent birth defects. Iron is necessary for the production of red blood cells and can help prevent anemia.
